Cooking For My Tribe

I love to cook. Even more so, I love providing my family with a healthy, nourishing meal. And yes, I also love spoiling them (okay…..myself) with dessert! God has created so many wonderful foods for us to enjoy but some, like sugarcane, have been sorely abused. While the standard American diet is loaded with this white substance, it’s causing harmful addictions for most people. In turn, it’s also causing health problems for many. So while the Trim Healthy Table isn’t demanding a cut-throat immediate ban to all sweetness, they encourage families to make a break and slowly diminish the hold sugar has. But don’t worry, their mantra of “You must fight chocolate with chocolate!” is sure to help!

Food Is A Big Part Of Life

Meal times are so important. It’s the perfect time to come together as a family, banish all electronics, and really get to enjoy each other. Nourishing our bodies during that time is just “icing on the cake”. While the THM lifestyle incorporates many things, it doesn’t have to be complicated. It breaks down to separating your (good) fats from your (good) carbs. So don’t say goodbye to carbs and fats. Just remember not to eat your fats and carbs in the same meal if you want to lose weight. Start by steadying your blood sugar and saying no to sugar and white flour. But remember, there are many other choices that can be just as satisfying!

It’s Kitchen Time!

I’m hungry, the kids are hungry, and the hubby is too… so let’s get busy! One of my favorite things about cooking for my family is the fact that I can incorporate my kids. Not only are they learning life skills, we get to have a lot of fun! I’m super blessed that my kids enjoy helping in the kitchen and sometimes, I even put them completely in charge of an item.

Today, we decided to give the Trim Healthy Mama Chicken Fajita Soup Recipe a try. It’s a simple and flavorful soup, perfect for making in the crock pot or pressure cooker. Since it’s a level 1 recipe, it’s basically fool-proof. PERFECT for this mama! I like easy recipes. 🙂 At the top of the recipe page, I found the markers letting me know that it required no special ingredients and is also dairy free. (Pearl and Serene also made knowing whether a recipe was FP (fuel pull), S (satisfying, high fat), or E (energizing, high carb) easy as that label is also right at the top.) The Chicken Fajita Soup offers options to make it any of the three!

My Kitchen Challenge

**One of the biggest challenges I face as a mom (of what most would call a bigger family) is making enough food to satisfy my little tribe. With five biological children as well as any foster kids currently in the home, we require a lot of food. We are actually on the verge of needing to get a second oven as sometimes, the one is completely full. So finding meals that pair well with a crock pot is a sanity (and time!) saver for sure.**

Back to our Chicken Fajita Soup! The prep was really pretty simple. The entire process was less than 15 minutes and that included me chopping up some “seasoning blend”, which you can read more about in the book.

Then came my adorable little helpers again. My older three love to help out by reading the recipe and making sure the younger ones follow directions. The littles, well, they sure do like to mix, scoop, dump, and pour!

Now the best part, supper is cooking and we just get to forget about it until meal time!

Simple Supper, Simply Delicious!

Check out this delicious blend of savory flavors! While my husband was a little nervous when I first told him I was making a “Trim Healthy Family” supper, he absolutely loved this soup.

Chicken Fajita Soup (THM Style)

Ingredients

  • 2 1/2 pounds boneless, skinless chicken breasts or thighs, thawed
  • 1 (10 ounce) can Ro-tel-style diced tomatoes with green chilis
  • 2 quarts chicken broth (with optional 4 tablespoons gelatin or integral collagen)
  • 1 (14.5 ounce) can diced, fire-roasted tomatoes
  • 10-12 ounce bag seasoning blend
  • 1 teaspoon mineral salt
  • 1 teaspoon black pepper
  • 4-6 cloves garlic, minced or 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 3/4 to 1 teaspoon chipotle powder
  • 1 teaspoon chili powder
  • *8 ounces cream cheese (optional to make it an S)
  • lime wedges, for serving

Instructions

  1. Put all ingredients except the cream cheese and limes into a crockpot.
  2. Cover and cook on high for 6 hours.
  3. If using cream cheese, then take out 1 cup of broth and put into blender with cream cheese. Blend till smooth.
  4. Stir back into crockpot.
  5. Remove chicken and shred on a plate. Return to crockpot.
  6. Stir well.
  7. Serve with a squirt of lime.
  8. Enjoy!

As you can see, I chose not to shred our chicken and cubed it instead because that’s my husband’s preference. Shredded would have been delicious too!

This Chicken Fajita Soup Recipe was a hit with most of the family so I’m going to call it a success. Notes: For a FP version, make as it without the cream cheese. If you’re goal is an E meal, serve the FP version and add a side of sprouted grain toast or baked corn chips. To create an S, include the sour cream. You could also add one of the Trim Healthy Mama’s s-friendly bread sides, located in the breads chapter of this new book. Because there are so many choices, this meal is perfect for whatever your wants and needs are!

Just talking about this soup again is making me hungry again! Doesn’t it look amazing!?
