SWEET POTATO NUGGETS (KAMOTE)

INGREDIENTS:

  • ¼ kilo kamote (sweet potato)
  • ⅛ slice kalabasa (squash) (sampung pisong hiwa sa palengke)
  • 1 cup malunggay leaves (moringa oleifera) (or any leafy vegetable)
  • ¼ kilogram chicken breast, ground or minced (or use ground pork)
  • 1 onion, minced
  • Salt and pepper, to taste
  • Flour (or use chicken breading so it’s tastier)
  • Bread crumbs
  • 1 large egg

INSTRUCTIONS:

  1. Peel the sweet potato and pumpkin. Cut into small cubes. Then cook the pumpkin and sweet potato until they soft.
  2. Cook the malunggay leaves separately, they need to be blanched in hot water/boil to soften and lose the slight bitterness first.
  3. Marinate the chicken breast with salt and chop finely until well grounded.
  4. Once the chicken breast are soft. Strain it well to remove excess water. Transfer into a bowl to mash them so they look like they are ground. Then add the malunggay leaves too. Mix it well and mash.
  5. Also add the other ingredients, mash them all together until smooth like a mash potato. Season with salt and pepper to taste.
  6. The mixture should look like a clay, that’s easy to mold.
  7. Prepare the egg, flour and breadcrumbs in 3 separate bowls.
  8. Use a wet hand in molding, scoop 2 tablespoon mixture. Shape it into a round ball then flatten a little to form into a nugget.
  9. Then roll the nuggets in flour, coat in egg (let it drip excess egg), and roll it in breadcrumbs. Using the right hand for egg mixture and the left for the dry ingredients. Repeat the same process until all mixture is molded.
  10. Place it in the freezer for about 30 minutes to quickly solidify the molded mixture.
  11. It’s too soft because of the pumpkin, but it can be done without pumpkin if you don’t want to have trouble molding it, the decision is up to you.
  12. Once the nuggets or frozen or firm.
  13. Heat enough oil in saucepan for deep frying, make sure it’s super hot and then just cook it on low heat so that the raw chicken mixed with the sweet potato nuggets is cooked well. Strong fire is not allowed because it is thin and may burn.
  14. Prepare your favorite dipping sauce like sour cream-mayo, ketchup-mayo, or sweet chili sauce.

KAMOTE NUGGETS (Filipino Language)

SANGKAP:

  • 1/4 kilo kamote
  • 5 piso na kalabasa
  • 5 pisong malunggay leaves (alternatively any fresh herbs you love like basil, rosemary etc.)
  • 30 pesos na chicken breast (giniling or tadtarin sa maliliit)
  • 1 sibuyas
  • Paminta
  • Asin
  • Harina ( or chicken breading mix para mas lasang chicken)
  • Bread crumbs
  • Itlog

PARAAN:

1. Balatan ang kamote at kalabasa. Hiwain ng maliit na pacubes. Pagkatapos ilaga ang kalabasa at kamote hanggang sa lumambot ang mga ito.

2. Ang malunggay ay ihiwalay ng paglaga, kailangang ilaga para lumambot at mawala ang konting pagkapait.

3. Ibabad sa asin ang chicken breast na tinatadtad ng maliliit.

4.Tignan kung malambot na ang mga ito. Salain para matanggal ang tubig. Ilipat sa isang bowl para i-mash ang mga ito para magmukhang giniling. Isama na din ang malunggay.

5. Isama na din sa pag smash ang chicken breast para mapino at halong halo ang mga sangkap. Lagyan na ng asin at paminta para sa panlasa.

6. Kailangan parang clay ang texture ng pagsmash sa mga ito para sa pagmold ng maliliit.

7. Ihanda ang itlog, ilagay sa isang lalagyanan. Maghanda din ng harina sa isang lalagyanan at maghanda na din ng bread crumbs sa isang lalagyanan.

8. Lagyan ng harina ang kamay pagtapos Magmold ng pabilog sa kamay, make sure na manipis para maluto talaga ang manok na hinalo sa kamote’t kalabasa. Pagtapos i-dip sa itlog, pag nabalutan na ng itlog ang minold na kamote nuggets ay i-idip ulit sa bread crumbs, itlog ang nagsisilbing pandikit para sa bread crumbs.

9. Ulitin ang proseso hanggang maubos ang naihandang kamote nuggets.

8. Ilagay muna sa ref kahit mga 30mins para tumigas at kumapit ng husto ang mga ito. Masyado po kasi siyang malambot dahil sa kalabasa, pero pwede kahit walang kalabasa kung ayaw mong mahirapan sa pagmold. 🙂 nasa iyo na ang desisyon.

9. After 30mins, mag init na ng mantika sa kawali, make sure na super init na tapos lutuin lang siya sa low fire para maluto ng husto ang hilaw na manok na hinalo sa kamote nuggets. Bawal ang malakas na apoy dahil manipis lang ito at baka masunog.

Pwede siyang isawsaw sa kahit anong sawsawan: Spiced Vinegar, ketchup or sour cream
