Mini Key Lime Cheesecakes

Plus, today is an awesome day! Myself and about 20 other bloggers have come together to throw a surprise virtual baby shower for Lisa from Wine and Glue!

One of the great things about blogging is meeting other bloggers and becoming friends. They can be so super supportive, it’s really amazing and has quickly become one of my favorite parts. I haven’t actually met Lisa in person, but I just love her and her blog! And I hope to meet her in person one day!

Reading her story about her last child, Elliot, absolutely touched me. Warning, you may need tissue. My younger brother and I were both born with potentially life threatening conditions and our stories could have been so different. So I am super excited for her and her family to welcome their latest bundle of joy – a girl!

I have been celebrating babies like crazy since this past weekend! I actually hosted a baby shower on Saturday at our house (see the cake I made) and then attended another one on Sunday afternoon. This is my third baby shower in a week! Crazy! There must be something in the water. 🙂

To celebrate, I brought (virtually, of course) this No Bake Key Lime Cheesecake in a jar. When attending baby showers, or any event with food really, I like to be able to taste everything. It’s just what I do. You know you do it too.

And since we all taste everything, I decided to make it a little easier on us and make these cheesecakes in little mini jars. Aren’t they super cute?! I’m seriously in love.

And they are so easy to make! Gotta love no bake treats. Seriously.

All you have to do for the crust is mix together a little butter and graham cracker crumbs. Did you know you can buy graham cracker crumbs already crumbled? Before I started blogging, I had NO idea! It’s true and it makes this dessert even easier.

I used the end of my muddler to press them into the bottom of the jars. If you decide to do that, don’t pack it in too hard or it will be hard to scoop out. I don’t speak from experience or anything.

The filling is basically a smaller batch of the filing used in my No Bake Oreo Cheesecake. Minus the Oreos of course. Plus key lime. You get the picture.

The usual suspects are included – cream cheese, sugar, key lime, Cool Whip, a little food color. Mix ’em all up and pipe, or scoop, it into the jars.

Pipe a little whipped cream on top and a quarter of a slice of a key lime and you the cutest looking dessert ever!

And if you’re wondering where to find these super cute jars, mine are from WalMart. They are the dry herb jars. They’re the same size as the jelly jars, but without the quilted pattern on the outside. They come in packs of 4. Pretty inexpensive too.

So be sure to make these, and be sure to check out all the other awesome recipes being shared for the shower today and help us celebrate!

Oh and I almost forgot! I’ll be guest posting for Lisa while she’s away on maternity leave from the blog, so keep an eye out for that!

Congratulations Lisa!! I hope you enjoy all the treats in your honor! 🙂

FAQs

Why is my no bake cheesecake base soggy? ›

I'd say it's too much liquid in the cheesecake batter and it didn't set fast enough and the liquid and moisture got into the base. Baking the base would help, but I guess if you need to bake it then there's no point to make a no bake cheesecake. Buiscuits, butter and a bit of cocoa powder for the base.

Is no bake cheesecake better? ›

The key difference between baked and no-bake cheesecakes is the former's superior texture. Baked cheesecakes have a dense, fluffy, moist and smooth texture, which is not possible with the recipe for no-bake cheesecake.

Why is no bake cheesecake runny? ›

The primary reason a no-bake cheesecake is too runny or doesn't set up properly is generally the temperature of the ingredients. If your cream cheese is too warm, the mixture will be too soft and will never set up properly.

Runny Cheesecake mixtures

Sometimes, you can simply over whisk, or under whisk a mixture. I cannot explain the differences, as it can vary as to why! You need to make sure when whisking a no-bake cheesecake mixture that you keep an eye on the mixture constantly so you can see when it thickens up!

No-bake cheesecakes should be stored in the refrigerator to keep them fresh and prevent spoilage. Here are some tips for storing no-bake cheesecakes: Cover the cheesecake with plastic wrap or foil to prevent it from drying out or absorbing any odors from other foods in the fridge.

Does no-bake cheesecake get firm? ›

But given time to chill all the way down to 40°F (4°C), which takes about six hours, the filling becomes firm and dense, much more like a "real" cheesecake and far easier to slice. During that time, the filling will lend some of its moisture to the crust, making it considerably less crumbly.

What's better no-bake cheesecake vs baked cheesecake? ›

What's the Difference? Baked cheesecake has a denser texture and fuller flavor than no-bake cheesecake. They are made using different ingredients. Each uses a different method to get the filling to set, and they are even made in different types of dishes.

Why is my no-bake cheesecake lumpy? ›

Your cream cheese needs to be room temperature before mixing. Trying to whip cold cream cheese into the filling will result in little lumps. Try this: Pull the cream cheese out of the fridge at least an hour before mixing. Unwrap the cream cheese and cut it into cubes if you're in a hurry to get the cake in the fridge.

What brand of cream cheese is best for cheesecake? ›

Philadelphia cream cheese is a popular brand of cream cheese that is often used in cheesecake recipes, but there are many other brands of cream cheese that can be used as well.

What happens if you over beat cheesecake? ›

Overmixing may lead to cracks and a grainy texture

Overmixing your batter can ruin the structure and texture of your cheesecake. With a batter mainly composed of cream cheese, sugar, and egg yolks, you can quickly form cracks in your cheesecake with the excess air that comes from overmixing (via Cheesecakes World).

Can I use half and half instead of heavy cream in cheesecake? ›

To substitute for 1 cup (237 mL) of heavy cream, combine 7/8 cup (232 grams) of half-and-half with 1/8 cup (29 grams) of melted butter. This substitute works in virtually any recipe, including those that require whipping.

Can you put no-bake cheesecake in freezer to set? ›

The filling needs proper chilling, a minimum of four hours but preferably overnight, to set into sliceable sections. Freezing the cheesecake results in a too-hard-to-enjoy crust and filling. Try this: The cheesecake should be shiny and firm to the touch when set.

Can I put a cheesecake in the freezer to set? ›

Before you can freeze cheesecake, you must let it cool completely at room temperature and then fully set and chill in the fridge overnight. If you're making a no-bake cheesecake, make sure it's chilled long enough to fully set. Once your cheesecake is chilled, you can wrap it and freeze it as is.

Can you put a no-bake cheesecake in the freezer to speed up the process? ›

We do not recommend freezing our no-bake cheesecake as a way to speed up the chilling and setting process because freezing will impact the texture of both the filling and the crust. We also do not recommend freezing the cheesecake as a make-ahead strategy.

How do you save a no-bake cheesecake that didn't set? ›

After the chill time, if your cheesecake still isn't firm enough, you can freeze it to help it set up. Be careful not to freeze it too long unwrapped though; it can cause the texture to become gritty.
